Filling:
Oil 1/2 Tbsp
Mushrooms, sliced 1/2 cup
-- sauté until aromatic
Carrot 1
Cabbage, julienned 1/2
-- continue to sauté until soften
Soy sauce 1 1/2 Tbsp
Sugar 1/2 tsp
White pepper 1/2 tsp
Sesame oil
-- season and transfer to bowl
Tofu skin roll:
Tofu skin (Yuba)
-- place the filling and roll it into an enclosed log
-- glue all the openings with the flour paste (3 Tbsp flour + water)
-- use another tofu skin to roll it up again
-- heat oil and fry it until golden brown, set aside
Braise and Sauce:
Ginger 4 slices
-- sauté until fragrant
Water 2 cups
Star anise 5
(Cinnamon stick 1)
-- add in and bring it to a rolling boil
Soy sauce 2 Tbsp
Sugar 1 tsp
-- season, once the sugar has melted, turn down the heat to medium amd carefully place the tofu skin roll into the pan
-- spoon broth over the tofu skin roll and turn it occasionally so each side has time to absorb the sauce
-- cook each side for about 5 mins
-- thicken the broth with cornstarch slurry to make the sauce
