纯素. Lentil curry
Legumes & Veggies:
Lentils 1/2 cup
Carrot
Courgette
Cabbage
(Can use tofu, pumpkin and blanched green beans)
Spices:
Ground coriander 1 tsp
Ground cumin 1 tsp
Ground cinnamon 1 tsp
Garam Masala 1 tsp
Ground ginger 1 tsp
Red chilli powder 1/2 Tbsp
Curry powder 1 Tbsp
Cumin seeds 1 tsp
Other ingredients:
Large tomatoes, finely chopped 2 (or 3 small)
Coconut milk 100 ml (substituted with yogurt and soymilk)
Water
Sugar 1 Tbsp
Salt 1/2 tsp
Nutritional yeast (optional)
Sauté the spices on low heat for about 2 mins
Add tomoatoes and cook on medium heat until tomato turn mushy
Add lentils and veggies, stir and mix well
Add coconut milk, sugar, salt and water, mix well, cover and cook on medium until fully cooked, about 15 mins
