Made some roast pork for New Years Eve dinner and saw a YouTube video on some Azerbaijani pastries with fascinating folding technique so decided to try it out.
I filled mine with chive and egg scramble using a oil starch paste flavoured with 5 spice in between the layers. Mine didn't end up puffing as nicely as the ones in the video but I used a simple yeasted dough instead of an enriched dough and I didn't egg wash them either.
I cooked them in the air fryer at 180°c for about 30 mins flipping them half way to make sure the bottom browned too. Perhaps if I shallow fried them in oil the layers might expand and separate into more of an flower shape? 😩 I'll need to experiment more!
