1/2 tbs. ground flax 3 tbs. hot water 1/2 tbs. tapioca flour 1 tbs. brown rice flour - or flour of choice 1 tbs. protein powder 1/2 tsp coconut oil 1/2 tsp. baking powder small pinch salt 1 tbs. hemp hearts - optional
For both versions: In a small bowl combine all ingredients, stir well. Spray a large ramekin well with coconut oil or non stick spray of choice. Add batter to ramekin and microwave on high for 2 minutes. Remove from microwave (will be hot) and turn upside down to release the muffin. Allow to cool for 1 minute before trying to cut in half. I prefer these toasted, so for maximum yumminess, be sure to toast before enjoying!
