排骨 500克 Pork back ribs 500g
盐1/2茶匙 Salt 1/2 tsp
五香粉1/2茶匙 Five spice powder 1/2 tsp
酱油 1汤匙 Soy sauce 1 tbsp
蚝油 1汤匙 Oyster sauce 1 tbsp
料酒 2汤匙 Cooking wine 2 tbsp
--糯米 1-1/4 cup( 230 g) w/ 酱油Soy sauce 1tsp + 糖Sugar 1/2 tsp + 蔓越莓干cranberry 2 tbsp
8/27/2023: for 3 lbs of ribs, use everything proportionally by volume, sticky rice added by weight
- ribs marinate overnight, sticky rice soaks overnight, add flavor the next day
- steamed for 1.5 hours
proportional recipe for 3 lbs (1360 g) ribs:
2.72 tbsp soy sauce
2.72 tbsp oyster sauce
5.44 tbsp cooking wine
1.36 tsp salt
1.36 tsp five spice powder --- subbed by pumpkin spice 1/2 tsp + shakes of white pepper + shakes of garlic powder + slices of ginger (could be frozen)
625.6 g sticky rice soaked overnight
2.72 tsp soy sauce
1.36 tsp sugar
5.44 tbsp cranberries --- could use more
steamed ribs的做法步骤

soak ribs for 2 hours to drain the blood

wash rice and millet and place them on a baking tray to dry

saute with 2 star anise, 3 bay leaves, 1 cinnamon stick and sprinkle of clove till golden
take out spices and pulse to make the grains smaller
alternatively,
- add soy sauce, sugar, and cranberries w/o sauting

mix rice coating in thirds to the ribs

starting with hot water, (mid to high temp if you can adjust) steam for 60 mins
- tian yuan did 40 - 60 mins steam
