for 2 lbs 7 oz (aka 39 oz) ribs - used double xiaogaojie's marinate, except only 1 fermented red bean curd + some juice, 1 tbsp of dou-ban, 3 tbsp of soy sauce, pumpkin spice instead of five spice - after mixing in the sauted rice, added 1/2 cup (~118 g) water and sesame oil

saute rice w/ star anise, bay leaf, clove, cinnamon stick; high heat, lift the pan up constantly to not to get the rice burned - optional: could soak for 2h then dry out on a towel then saute * it tastes better if you had damp surface to start with
