Place tomatoes in a large pan, add the tomato puree, sugar, onions, celery, oil, salt and paper. Cook on a medium high heat for 8 to 10 minutes until softened. remove from heat, allow to cool. In a food processor combine until pureed.
Return to pan, heat and add wine. Reduce heat, simmer for 20 minutes or until thickened. Add butter and stir until melted and combined. Season again if desired.
Cook pasta in a large pan of boiling water, until al dente. Drain, pour over the source, toss well and serve.
