这次切粗条,大约浸泡3小时。吃口很接近Shake Shack家,外脆里糯(外皮脆度和Burger King家还差一点,觉得需要浸泡更久和切更细些)

用料

炸薯条 (Shake Shack Texture French Fries的做法步骤

步骤 1

- Clean 4 Russet potatoes, remove the skin. - Slice the potatoes into similar size long sticks 洗干净4个褐皮土豆, 去皮后切成大小差不多的长条。

Soak in cold water for at least two hours to remove starch, change water at least three times. 冷水浸泡至少2小时以去除淀粉。期间换水至少3次。

Remove the moisture completely by draining the water in the mesh colander 过滤去除水

步骤 4

Pat dry the potato sticks with paper towel 厨房纸上擦干土豆条

步骤 5

Heat 500ml cooking oil (high smoking point: such as peanut oil) to 300F 加热500毫升花生油到300华氏度(150摄氏度)

Fry the potato sticks for 5 minutes (Do it in two separate batches: 2 medium size potatoes in one batch) 分2批炸,每一批大约5分钟。(每两个土豆做为一批)

Remove the lightly fried potato sticks from the oil 漏勺捞出浅炸的土豆条

步骤 8

Increase the temperature of the oil to 400F. Re-heat the potato sticks until golden yellow 调高油温到400华氏度(200摄氏度),复炸土豆条直至金黄色

步骤 9

Sprinkle salt and serve (1g salt for 1 medium size potato) 捞出,撒盐 (大约每颗土豆用一克盐)
