High-gluten flour 250g --- I used all purpose
Corn flour 100g
Salt 4 g
Dry yeast 4g
Olive oil 30 g ---- I used 25 g
Water 210-220 g --- I used 202 g, a bit sticky but workable, could consider reduce but not necessary

rest for 1 hour, till you poke a hole on it and it doesn't bounce back

shape: degas, fold, then ball up into a sphere;
rest for 15 mins
degas gently and ball it up rounder

bake at 428F for 30 mins
- 4/6/2024: bake at 365F for 35 mins (reached over 190F, might be able to bake for shorter time)
