THINK I NEED TO MAKE THEM CLOSE-ENDED
this makes 3 dough in total, with 1/3 (246 g) being pork floss, which is 8 little rolls ---- 3/1/2025: did HALF dough and made 12 rolls
flour 400 g
sugar 40 g
salt 6 g
yeast 4 g
water 236 g ---- half is 118g, I used 100g on 3/1/2025
egg 40 g --- sub with equal parts of cream and milk
butter 40 g (cut in butter with flour is fine, esp when it is hot)
filling
after proof, roll into a sheet and add a layer of mayo (leave bottom blank) --- 16:24
pork floss 50 g. ---- 75g for 12 rolls
bake at 356F top, 392F bottom for 17 mins
(convection oven: 320F for 14 mins)
(if want 1/3 to be seedweed, needs to cut 246 g out and add 6 g seaweed powder)

roll up, could stretch and roll so it gets longer
dust in flour, then cut into 8 pieces
