mince onion
soak chili peppers
cut against the way in fours, then cut along the grain then blanche beef
saute with oil, chili, pepper corns for 5 mins saute minced onion till transparent
add beef and saute
add in ginger, star anise, and cinnamon stick add soy sauce, dark soy sauce, douban and salt
add water
for 4 lbs of beef shank, stew 60 mins
