add pomelo peels to room temp water, add a splash of salt and bring to boil
soak in cold water overnight

in a saute pan, add pomelo peels, half sugar, and water to saute after sugar is dissolved, add the other half sugar in saute till water is gone
dry out
dip in sugar (1 flat spoon on a plate) and then store
