Roughly chop Cilantro
Peel garlic, then mince
Peel shallot, then mince
Cut zucchini into 1/4-pieces

Add the tomatoes, cilantro, zucchini and 1 tbsp lime juice to a large bowl. Season with salt and pepper. Toss to combine
